【新潟県/大沢温泉】【 里山十帖】絶景の展望露天風呂とサウナ、ミシュランシェフによるローカルガストロノミー

We went to Japan in November, stayed at several hotels and ryokans, and dined at several restaurants. We have made a video of the event and are uploading it as we go along. This time we would like to share our stay at Satoyama Jujo located in Minamiuonuma City, Niigata Prefecture. We took the Joetsu Shinkansen to Echigo Yuzawa Station. Transferred at Echigo Yuzawa Station to JR Joetsu Line and got off at Osawa Station. From Osawa Station, we took the cab that was pre-booked for us to Satoyama Jujo. Riding through the mountains with a light dusting of snow and the rural landscape of Minamiuonuma. When we arrived, the staff welcomed us outside and carried our large luggages. A 150-year-old renovated traditional Japanese house in a natural satoyama area with a very nice atmosphere. A popular inn produced by Mr. Toru Iwasa, the representative of the media creation company "Jiyujin". Carps swimming in the pond by the entrance. There is an outdoor fireplace and garden chairs in the front yard with a wood-burning fireplace to create a warm atmosphere. Spring water flows through a bamboo tube in a corner of the front yard. Cans of beer were chilled. Luxurious entrance. The massive entrance door opens and closes automatically with a sensor. This space is a windbreak space between two entrance doors It’s a high ceiling. A large object that catches the eye as you enter. The work is called "Fuku-Kozuchi. We took off our shoes at the entrance and went up to the floorboards made of domestic natural wood. No slippers to enjoy the feeling of the floor A reception building that makes use of a 150-year-old traditional house, is a magnificent structure made entirely of zelkova wood and lacquered with lacquer. An impressive atrium space with a ceiling height of 10 meters. The magnificent pillars and beams are meticulously constructed. The lighting hanging from the high ceilings is also wonderful. We checked in at the table in front of the wood stove by the entrance. We received a "Guide to your stay." Explanation of the facility, guidance around the area, optional activities, etc. Sunset and sunrise times are also handwritten. We had Curved Ditch white wine and sake-kasu cake as a welcome drink and snack. Front desk Ring the bell and a staff member will come and take care of you. A large object sitting in the center of the lobby The "Fuku-Kozuchi" is a work by sculptor Ryuichi Ohira, and is made entirely from a large camphor tree in Kyushu. There was also a Balmuda electric kettle and original drip coffee on the second floor. In consideration of the environment, they minimize the number of amenities to reduce "disposables" as much as possible. Next to the bathtub was a washing area with a shower and body soap, etc. On the way to the large bath "Yudokoro Amanogawa," spring water from Mt. Osawa and hand towels are provided. Tatami mat floor until the halfway point, but you can put on sandals here. There are large public baths beyond the double doors. Men’s and women’s baths switch at 10:00 p.m. We went there around 6pm and at this time the left side was the men’s bath. Wooden interior gives the warmth of wood. Osawa Onsen is clear and colorless, slightly alkaline (pH 8.46) It is a very effective hot spring. Four washing stations in front of a large mirror. Inner bathtub is made of Japanese cypress. Wooden board with information on the ingredients of Osawa Onsen High ceilings give a sense of openness. This open-air bath is a rock bath. On the right was the women’s bath. Very high ceilings with skylights. This wash basin has a bowl sink. The inner bath is a stone tile bathtub. I went to the open-air bath to take a video, but it was too dark and unfortunately I didn’t get good footage. We spent a blissful moment in the open-air bath while looking up at the star-filled sky. There is a bar time available from 6:00 p.m. to 10:00 p.m., where you can freely enjoy sake, shochu, and homemade drinks. Several bottles of liquor and glasses were available on the front desk. Umeshu (plum wine), Shochu (Japanese liquor), Whiskey Three bottles of Junmai Sake: Yukiotoko, Takachiyo, and Hakkaisan On the desk are plaques with the Michelin one star, the Gault et Millau Japon Tenoir Award, and many other awards. What caught our attention was the Green Guide’s 2023 World’s Best Lady Vegetable Chef Award won by Chef Keiko Kuwakino. Dinner will be served at "Keyaki" in the main dining room. We are looking forward to having Chef Keiko Kuwakino’s cuisine that aims for local gastronomy. This room also retains the framework of a house that used to be an old private residence. High vaulted ceilings Thick and magnificent pillars and beams are assembled. The menu seems to be called "Chihajimete Kooru" (The time of the first day of winter). We ordered "Pairing to Taste the Whole Climate, History, and Culture of Niigata". First, Champagne E. Home-made pickles of carrot, Nozawana and radish Miso soup with lots of tofu, green onions and potatoes “Satoyama Sappari Kanmi (Refreshing sweet)” Persimmons on yogurt with Sake jelly. Soybeans and Cookies We had herbal tea with fresh mint at the end. Ingenious cuisine that makes full use of ingredients from local producers and incorporates local cuisine. It was a very satisfying dinner that went very well with the selective wine/Sake pairing. The next morning we woke up early to catch the sunrise. Very refreshing early morning view. We went to the public baths to watch the sunrise. Waiting for the sunrise while soaking in the hot springs of Infinity’s open-air baths The sun emerged about 20 minutes after the scheduled sunrise time. It is a beautiful and impressive sparkle like a diamond. It was too bright to keep my eyes open. This is the indoor bath in the other public bath. Here is the other open-air rock bath taken in the morning. You can also enjoy a spectacular view from here. This is the sunrise seen from the terrace on the first floor of our room. We could see a wonderful sunrise from the second floor terrace without a cloud in the sky. Breakfast was served in the special private room "Katsura". Description of breakfast dishes of rice, miso soup, pickles, and cut greens Honey on spoons We took a lick and then dissolved it in white water. The earthenware pot for self-serve miso soup is on fire. Large nameko mushrooms, homemade miso balls, tofu, and scallions prepared as ingredients for miso soup. Add the ingredients according to the instructions. We removed the lid as the water in the pot came to a boil. The first step is to add the nameko mushrooms. Then add green onions. Then throw in the tofu. Finally, the miso ball is placed on a wooden ladle and dissolved in the soup and added. Miso ball is added adjusting the thickness to your preference. Serve the finished miso soup in bowls. We had hot miso soup. Minamiuonuma Osawa area rice cooked with spring water from Mt. Osawa Natto and old pickled Nozawana We had a craft beer called Sarukurayama, Rydeen Pilsner from Niigata Hakkai Brewery. Side dishes Home-made pickles of Takuan (pickled radish), turnip and daikon (Japanese radish) Free range egg “Tottoko Tamago” is served and we put it over rice. We put the first egg over white rice and the second one over brown rice. The gently seasoned, healthful breakfast made us feel refreshed in the morning. After breakfast, we took an open-air bath in our room. Sunlight is reflected on the bath water. The open-air bath with a beautiful view on a fresh morning was a very pleasant experience. We delayed our check-out time by an hour to take advantage of the private Finnish-style sauna, which had just opened. There is also a washroom The sink was new and shining white. Effe Organic skin care products were available. Three different scented sauna cents (fragrances) Product of "Loylytuoksut" in Finland. A bucket and a wooden scoop set for waxing in the corner of the shelf The temperature was set at a low 76 degrees Celsius, but the temperature can be adjusted. Glasses in a basket with a cloth hanging above the refrigerator. Spectacular views of the mountains and nature can be seen from the Totonoi space. It felt so good. Spectacular views from guest rooms and open-air baths, hot springs rich in beneficial properties, dishes that evoke the vitality of nature, Interior in harmony with the majestic building renovated from a traditional private house. It was a wonderful and fulfilling stay in every aspect. It was a good opportunity to rediscover the splendor of Japan’s traditional culture and landscape. This is a detached building built by renovating a warehouse. It seems to have a spacious open-air bath and private sauna. We went to the side of the building. There was a smokehouse. It’s a peaceful landscape. Many daikon radishes harvested from the fields are drying in the sun. There are wonderful views of rice terraces and forests near the inn. We were able to refresh both our mind and body in the Satoyama area of Minamiuonuma, surrounded by beautiful mountains and rich in nature. Free shuttle service available from/to JR Joetsu Line Osawa Station (limited to one time per day, reservation required). Flat rate cab service can be arranged from Echigo Yuzawa Station. 約半年ぶりに日本に行き、新潟県南大沼市にある「里山十帖」に宿泊しました。

築150年を経過する古民家をフルリノベーションしたレセプション棟は高さ10メートルの吹き抜け、黒光りする柱と太い梁が組まれた圧巻の古き日本の建築美。その古民家に世界を代表するデザイナーの家具が素敵に融け合いセンスの良い落ち着いた空間となっていました。
温泉旅館として、初めてグッドデザイン賞のベスト100・中小企業庁長官賞の2つを受賞していて
お部屋や館内各所にも北欧中心の家具や現代アートが備えられ古いものと新しいものが融合したセンス溢れる居心地の良い施設でした。

湯処「天の川」では景色と一体化したインフィ二ティ絶景露天風呂から見渡す日本百名山・巻機山をはじめ、標高2000メートル前後の上信越国境の山々の景観は息を呑むほどです。季節や天気によって露天風呂から満天の星空や頭上を横切る天の川、雲海も見ることができるようです。

チェックアウト時間を延長してオープンして間もない貸切サウナを利用しました。セルフロウリュのあるフィンランド式サウナで檜と十和田石で作られたサウナ室も綺麗でした。整いスペースから絶景が望めプライベート空間で贅沢に気持ちよく過ごすことができました。

2020年「ミシュランガイド新潟2020」で、一つ星を獲得、2021年「ゴ・エ・ミヨ2021」テロワール賞受賞など、数々の賞を受賞している桑木野シェフのお料理は新潟・南魚沼の風土・文化・歴史を料理に表現することを目指したローカルガストロノミー。こだわりの地元生産者による旬の食材。素材を活かしながら工夫を凝らした「自然派日本料理」です。山菜、伝統野菜、有機栽培の野菜や無添加、天然醸造の調味料を使ったお料理はやさしい味付けでからだにやさしいお料理で、一品一品全部美味しくいただけました。仙人清さんのコシヒカリを土鍋で炊いたご飯も絶品でした。魚沼産の銘柄を中心に米処新潟の酒蔵で製造された日本酒の銘酒、カーブドッチやドメーヌ・ショオなど新潟のワイナリーで生産されたワインなど厳選されたお酒を多数取り揃えています。

宿周辺には美しい里山の風景が広がり、絶景ポイントの宝庫です。春には美しい水鏡の棚田が広がり、秋にはそれが黄金色に輝きます。季節に合わせて里山の自然に触れるオプションツアーやアクティビティーが用意されていてより愉しい時間を過ごすことができるようです。
